I've seen a time life hard back book, IIRC, that showed a German trooper with a M-1 carbine.

There are numerous picts of Germans using M1 carbines. Most of them are around the time of the "Battle of the Bulge." In the Ken Burns "The War" series you can even see a German soldier firing an M1 carbine.
