Birch M1917 Enfield stocks do exist. They are pretty uncommon though. I've only seen a handful in the last 20 years. You would probably have to look at a hundred rifles to find one in a birch stock.
Original furniture used american black walnut on the Model 1917 and Pattern 1914. During WWII english walnut was used for replacement furniture on P-14s and birch was used for replacement furniture on M1917s.
