Saw a Mauser yesterday, no receiver crest, marked "Kar 09" (I think?) on the left side, instead of the cast flash guard on the back of the bolt there was a metal plate. The bolt was turned down like a French Berthier. Rear sight was a center-post type. The barrel stuck out about an inch past the sight guards. The only '09's I know are Peru. Anyone got any ideas?

Very strange. Sounds like a user modification to an M89-M96 bolt sleeve. What is a "center-post type" rear sight?

Like the one on a SMLE. Kind of shaped like an "I" when it's flipped up (vice the "H" type that have the V between the two verticals.)

Sounds like you mean a tangent sight like on a SMLE as opposed to a leaf sight like on a 1903 Springfield.
